I have been perfecting this - over the past few years. 1 Cup Yellow Corn Meal 1 1/2 Cups white flour 1/4 Cup white granulated sugar 2 Tablespoons honey 1 Tablespoon baking powder 1 teaspoon salt 1 Cup skim milk 1/3 Cup Canola oil 2 eggs or equivalent whole egg substitutes Mix in a large mixing bowl until lumps almost gone (use a wire whisk). Do not over beat. Whip until just mixed in - i.e., no large lumps of flour. (Therefore, do not use a hand mixer.) Pour into a 9x13 pan (thin) and bake at 400 degrees about 20 minutes - corn meal will pull away from the edges a bit and be dry on top, slightly brown on the edges. If you are not sure, use a toothpick in the center of the pan to check on it being done. Spread the top with IBCINB lite - very thinly - on the top. Cut into squares. Corn bread is soft, almost like spoon bread, melt in your mouth. Falls apart so remove pieces with a spatula, eat with a fork. If you use your fingers, you will be licking them! You don't need gobs of jelly or jam or honey or anything else. Great with chicken. Pan-fried chicken8 breast fillets 3 Tablespoons Canola oilMrs. Dash original seasoning Seasoned salt Turn on an electric skillet to 300-325 degrees. Wash the chicken (put the chicken package in the sink, wash off the chicken, place in the skillet - before the skillet has heated. If using a large skillet on the stovetop, use medium to high heat. (Putting the chicken package into the sink allows the nasty stuff to drain down the sink - keeps your counters clean.) Cook chicken until it appears cooked 1/3 - 1/2 inch through. Mix up the corn bread while the chicken cooks on one side. Put corn bread in oven. Season chicken with Mrs. Dash and seasoned salt. Turn chicken over. Heat the vegetables - on medium heat for 5 minutes or until the liquid looks like it is about to boil (little bubbles). Continue cooking chicken until browned on the second side (about 15-20 minutes per side). Turn heat down to 250 and place a lid on the skillet. Cook another 15 minutes while the cornbread is baking. Watch the corn bread. Corn bread takes 20-25 minutes to cook. Chicken about 40 minutes or a little more depending on the size of the chicken fillets. For faster cooking, cut up the large fillets before cooking. Fix a salad or heat up green beans or peas or spinach - for color contrast. |
