Plain Mixed-Up Fried Eggs

        Heat skillet over medium high heat with 1 pat of butter or margarine
        Add 2-4 eggs, stirring in the pan. Reduce heat to medium or medium low. Cook slowly.
        Let sit and cook until almost cooked through
        Flip over, cook until no runny yolk or egg white (These days requires that eggs are cooked through.)
        Slide out onto a plate. Serve.

Basic Omelet

        Heat skillet over medium high heat with 1 pat of butter or margarine
        In a small bowl or mixing cup, stir 2-4 eggs with a fork
        Add 2-4 tablespoons cream (1 tablespoon per egg)
        Season with salt and pepper
        Pour eggs into the hot skillet and reduce the heat to low.
        Cook undisturbed until almost cooked through
        Flip over, cook until no runny yolk or egg white visible
        Slide out onto a plate. Serve.

        I used to serve this with grape jelly spread on it. Apple works too.

Variations on the Basic Omelet

  • Shred some cheddar cheese - sprinkle over the top when first cooking.
  • Finely chop green peppers and onions. Add 1 tablespoon of chopped mix per egg. Stir in before placing in the pan.
  • Combine shredded cheese with onion - 1 tablespoon cheese per egg, 1/4 teaspoon minced onion.
  • Chop up ham or break up bacon (cooked) into the egg mixture
  • Mix chopped ham, onion and cheese into the egg mixture
  • Mix 1 -2 tablespoons cooked sliced mushrooms into the egg mixture
  • Mix 1/2 teaspoon minced chives and 1/2 teaspoon minced parsley per egg into the egg mixture
  • Add 2-4 tablespoons cooked tomatoes per egg into the egg mixture
  • Spread with jelly when cooked (yes, it is a real recipe)

Scrambled Eggs

        Instead of letting eggs sit like a pancake in the pan, stir lightly, removing cooked egg to the sides of the pan. All the variations work this way too.

Pepper's Cuddly Eggs

        (cuddly because they are so soft and fluffy and light and wiggle nicely on the plate). My food has to have flow to it on the presentation.

        Scramble eggs (in a glass mixing bowl or cup - whip up with a fork)
        Shake pepper into it.
        Just a tad onion powder I don't know how much - a few shakes.
        Shake in garlic salt - don't know either, shake and shake and shake (this is determined by your love of garlic)
        shred Colby/Jack cheese lightly into it         Add some half and half or heavy whipping cream until eggs are no longer yellow but pale gold.
        whip a little

        Place in a buttered frying pan. Medium high heat. Wait until the next song to turn them (Pepper cooks by CD music)

        Put on plate then spread butter on the top so it melts and flavors them.

        Add toast (Pepper burns toast, her men make their own)

        Add orange juice and tea (Pepper does do good tea).

        That's it.

        Everyone likes them. I don't know why these turn out when nothing else does.

        But S___ and D___ even like them on bread for dashing out the door to eat on the run.

        The butter is important, flavors it somehow that no one likes them without that topping.


Hard Boiled (18-20 minutes) Eggs - Start with Cold Water

        This could be for Easter eggs. Place eggs in cold water, bring to a boil and simmer 18-20 minutes to ensure the yolk is cooked. Roll the eggs during cooking to ensure the yolk stays centered.

        Cool down with cold water. This loosens the shell.
        Serve warm, let the others peel them.

        Serve them on a plate with shell removed and butter pats nearby. Salt if desired.

Cheater's Deviled Eggs

        Serve eggs split open with a dab of low-fat or fat-free mayonnaise on each half. Shake on one shake of paprika.

Egg Bombs

        When heating leftovers, DO NOT do this trick:
        Peel egg
        Place in microwave oven
        Heat for 30 seconds.
        Remove from oven, stand on fatter end, poke the top with a toothpick.
        Duck.

        The yolk will have vaporized and on touching the white (making an impression), the egg will explode yolk far enough to color the ceiling in a normal-height room.

        Like I said, egg bombs.
