| December 20, 2000 Here are two recipes from two different magazines that are too close to call! Hot Spiced Cider10 whole cloves4 3" cinnamon sticks 4 pieces crystallized ginger, chopped 1 gallon apple cider 4 cups pineapple juice 2 cups orange juice 1/4 Cup fresh lemon juice 1/3 cup sugar 1/4 teaspoon salt White run (Optional) Place cloves, ginger and cinnamon in a cheesecloth ball (double layer) and tie tightly closed. Put everything bu the rum (include the spice bag0 into a stockpot and bring to a boil. Turn down the heat and simmer for 20 minutes. Remove and discard the spice bag. Serve with rum if desired. Makes 22 cups. 133 calories per cup. Hot Cider with Orange Twists1/2 gallon apple cider1 cup pineapple juice 1 cup orange juice 1 tablespoon brown sugar 1 tablespoon lemon juice 1/8 teaspoon salt 8 whole cloves 4 unpeeled orange slices (1/4 " thick) 4 3" cinnamon sticks Push two cloves and one cinnamon stick into each orange slice (make a pinwheel) Put everything into a slow cooker - cover and cook 2-4 hours until heated through. Discard the spice wheels. Stir befor serving. Garnish with more orange slices (twist into an "S" or open figure 8 and stick a cinnamon stick through the orange flesh to hold the shape). |
