Lethal Macaroons

        Loved the jumbles and Snickerdoodles. Are macaroons the same thing?

        No. Macaroons have their own dire existence. Or should I say are the bane of mine! I run through the coconut area of the supermarket!

Easy Macaroons

        2 8-oz packages of shredded coconut
        1 15-oz can of sweetened condensed milk 1 1/3 cups (find this near the evaporated canned milk near the powdered skim milk at the supermarket)
        2 teaspoons vanilla (real vanilla - Shillings or Watkins)

        Heat oven to 350 degrees.
        Mix ingredients. Spray cookie sheet with Pam (well-greased cookie sheet)
        Drop by teaspoons (leave space between - about three across on a sheet, 4 wide - 1 doz. spaced out dough drops per sheet)
        Bake 10-12 minutes.
        Cool on a wire rack (here we go again!)
        I've made these. Addictive. Makes about 4 dozen.


Coconut Macaroons

        These take more skill and effort.

        2 egg whites
        Dash of salt (one shake)
        2/3 Cup white sugar
        1/2 teaspoon vanilla
        1 3.5 oz can flaked coconut (1 1/3 Cups)

        Beat egg whites with salt and vanilla until stiff. Gradually add sugar (add some sugar, beat, add more, beat, etc.) Beat until stiff again. (the dough - not you - although you may be!). Fold in the coconut. (Use a rubber scraper and slowly bring dough from the bottom up and over the top, repeating the process until mixed. Do not "beat!")

        Bake at 325 degrees about 20 minutes. Makes 1 1/2 Dozen cookies.

        These are Karmic cookies! They taste so good (just reading them) that they feel like a past life memory. Like when I cooked. Or someone else did.

        If a psychic read my aura she would shake her head and grin.

        "It's all sugar cookies, chocolate chip cookies and cookie dough."

        I could argue these are foundations of a good meal. Foundations of a good meal to ME are cookies, peanut butter and pudding. The building blocks of a good sugar buzz.

        Once in a while I need to throw some meat and potatoes in, though. I do know what condensed sweetened canned milk is. I drink it straight from the can. One of my all time favorites.

        P.S. My mother couldn't find any kind of milk that would stay down for me until she hit on canned milk. I was bottled fed on canned milk and think it's wonderful. Gave me RED HAIR. No carrots did this, I tell you.

        You must be drinking some now! Actually, coconut macaroons made with the sweetened condensed milk is something I made once - and NEVER FORGOT! I fear to make them again!

        My poor boys! I raised the oldest on Soymilk. He'll probably write a Mommy dearest!
