| Peanut butter cookies are second only to the chocolate chip on the list of favorite sins. 1/2 Cup (1 stick) margarine or butter, softened to room temperature 1/2 Cup Crunchy Reduced-Fat Peanut Butter 1/2 Cup Granulated Sugar 1/2 Cup Brown Sugar 1 large Egg 1 1/4 C. Flour 3/4 teaspoon Baking Soda 1/2 teaspoon Baking Powder 1/4 teaspoon Salt Top with: 2 oz. Mixed Nut chips (almond, pecan, peanut and walnut) Prepare cookie sheet with: Pam cooking spray Beat margarine and butter and sugar until smooth. Add rest of ingredients (all but the nuts) and mix well. Add nuts and stir through batter. Do not chill. Prepare cookie sheet: Use Pam spray on cookie sheet. Preheat oven to 375o F. Drop batter by rounded tablespoon onto cookie sheet. Place a pinch of chipped nut mixture on each cookie. Place cookie sheet in middle of oven. Bake until golden (cooked in center). Approximately 10-12 minutes. Cookies are thin and toffee-like. Variation: Chill dough for 1 hour. Form into balls and dip into mixed nuts before placing on cookie sheet. Variation: Add 1 Cup chopped peanuts to the batter and chill dough for 1 hour. Place formed balls onto cookie sheet and bake as above. |
