Veggies - from the VP I used to work with....Turns out he has 200 cookbooks! Exported from MasterCook Mac Russ's Portabello Mushrooms Recipe By : Russ Almand Serving Size : 2 Preparation Time :0:15 Categories : Vegetables Amount Measure Ingredient -------- ------------ -------------------------------- 2 large mushrooms 1 red onion, sliced 1" thick 2 tablespoons Canola oil 2 tablespoons balsamic vinegar herbal salt substitute Remove or trim stems on two large Portabello Mushrooms. (These are those big things you can buy whole or sliced at the supermarket). Put top side down and dribble Canola Oil on them. Dribble Balsamic vinegar over them. Season if desired with Italian seasoning or some Herb de Provance or a herbal salt-substitute. Slice the red onion into 1" thick pieces. If you left the stem on the mushroom, knock out the center rings of the onion slice, else leave whole. Slip onion into the mushroom and add remaining oil and vinegar. Wrap in aluminum foil and bake until tender. To present, unwrap and slice in half.
