Fall Things - Corn Fritters

      It's fall - and my thoughts turn to fall things.
      Falling leaves - no kids to play in them - now they are simply a nuisance.
      Pumpkins? didn't grow any - grew lots of gourds - will take them South - they can grow down there.
      Maple Syrup candy - that distinctly New England sugary treat - that you expect it to be sweet but it has its own flavor candy confection pressed into leaves and what-all.
      REAL maple Syrup.
     
      And corn fritters.
     
      Corn fritters made country style is where you use a knife and cut and scrape the kernels off the raw corn and put this mass into eggs and pancake batter so the kernels are touching in every spoon.
     
      Fried like pancakes - crispy.
      And served with melted butter and Maple Syrup (and sausage and crisp bacon if you want to go that far).
     
      I made some with frozen white (sweet) corn and Kasteaz buttermilk pancake mix (add water) - used REAL Maple Syrup and mixed in some Lite Syrup (Log Cabin is NOT real syrup).
     
      I made just 4 small pancake fritters
      Delicious!
      Won't need them again until next year -----.
      Now I need to find a piece of that candy - because one is all you need -----
