Turkey pot-pie on the stove-top

2001

April 9, 2001

I did this for leftover turkey and reduced salt eating.

In a 2-3 qt saucepan, mix and heat:

        2 cans low-salt low-fat Cambell's cream of Chicken soup
1 soup can of 1% milk

1 can of no salt added green beans
1 can of no salt added nibblets
1 can of no salt added sweet peas
1 can of sliced new potatoes (I couldn't find no/low salt potatoes)
about 2 Cups or chunked turkey right off the bone - white and dark is fine
heat on LOW heat - stir every 60 seconds with a BIG spatula or spoon until hot
Serve in a big soup bowl with a dill pickle.

Makes a VAT - reheats in the microwave (use 2-3 min at 70% power glass dish - put a lid on).

You could put this into a pie pan and put a crust on the top - my son doesn't eat crusts
Or put biscuits on top - make dumplings - most men love those - not my younger son.

For crusted pies or dumplings - bake at 350 until the top is browned and/or the insides bubbling
        About 20 minutes

My son ate his in MINUTES - I think the crying jags happen when he's hungry and the pain gets overwhelming - even though he's eating like a horse all day long!
        He had this at 10PM!

Substitute cut-up chicken for the turkey if you haven't roasted one lately.

I use cream of soups for gravy - use 1 can and 1/2 can milk - simmer until heated - stir it up with a whisk or fork before heating and afterward.
Mushroom is great - they have low-fat mushroom soup now (John hates mushrooms)
        Broccoli works
        Chicken is fine
Cream of Potato soup is great over pork chops - brown them and then add soup and milk and cover and simmer for 20 minutes...I add sliced potatoes too and voila - with a salad I have dinner!
